These pumpkin spice waffles are sure to please any crowd! They come together for a quick and nutritious breakfast that kids love.
I love pumpkin spiced anything, especially when it comes in breakfast form (breakfast is my favourite meal of the day!). After finding inspiration from a pumpkin pancake recipe (“Pumpkin Pie Pancakes” by Karen Humphrey), I decided to try making waffles instead and they turned out amazing.
I paired these delicious (and nutritious!) waffles with greek yogurt and fresh blueberries, and everyone loved them. I mean…just look at them!
They will definitely go on our weekend breakfast rotation! Bonus: they freeze really well (just pop them into your toaster for a quick weekday breakfast option!). What’s more is that you can cut them into bite-sized pieces and pop them into school lunches! Now that’s a win!
Pumpkin Spice Waffles
Delicious pumpkin spice waffles to satisfy your seasonal craving!
Ingredients
- 3/4 cup all-purpose flour
- 1/2 cup whole wheat flour
- 3 tbsp sugar
- 2 tsp baking powder
- 2 tsp pumpkin pie spice (you can make this yourself by combining 3 tbsp cinnamon, 2 tsp ground ginger, 2 tsp nutmeg, 1 tsp ground cloves, and 1 tsp allspice)
- dash of salt
- 1 cup milk
- 2/3 cup pumpkin puree
- 2 tbsp vegetable oil
- 1 egg
- 2 tsp butter for greasing the waffle iron
Instructions
- Combine flours, sugar, baking powder, pumpkin pie spice and salt in a large bowl
- Beat egg, milk, oil and pumpkin puree in another bowl
- Combine wet and dry ingredients until just moistened
- Heat your waffle iron and grease with butter
- Using a 1/3 cup measuring cup, drop 1/4-1/3 cup dollops of batter onto the waffle iron, and cook until just golden brown on either side
Notes
Drizzle with maple syrup and serve with a yogurt and fruit smoothie (or yogurt and fresh fruit). Enjoy!
